Why Use Wood?

The main reason is flavor. Roasting occurs by means of convective hot air that flows across the roasting drum, transferring heat and the aroma of the wood to the beans. With this method of roasting, the end result is influenced by the type of wood being used, from natural coals to aromatic chopped fruit-wood or other aromatic types such as oak.

The other reason is the environmental impact of using wood is extremely clean and simple, with a highly efficient firing group that consumes a small amount of wood per batch. For example, one batch will only use roughly two pieces of wood, depending on its size. We source our wood locally minimizing the ecological impact of our roasting.

Why Are The Beans Oily?

Typically in darker roasts the internal pressure inside the bean (mostly due to the CO2 produced in roasting) drives large amounts of oil to the surface. Even in lighter coffees there can be some oil present but will usually evaporate during roasting due to gas heat being a low moisture heat source. Since we use wood the coffee is roasted in a significantly more humid environment allowing more of the oil to remain with the beans even with our light and medium roasts.

Should I Freeze My Coffee?

Freezing your coffee is a great way to extend its shelf life. You should only consider freezing it if you wont be consuming it within a few weeks of receiving it. Freeze your unopened bag until you are ready to use it. Once you take it out of the freezer do not refreeze it as you will just be trapping more moisture in the coffee and accelerate the staling process.

What Grind Should I Get?

While whole beans and grinding right before use is going to give you the best results not everyone has a grinder. Typically if you are using an Auto Drip ie standard coffee machine we recommend getting a 5 Auto Drip/Siphon grind. However there are slight variances depending on your brew method of choice and if you are unsure feel free to contact us and we can make a recommendation.
